Chocolate  Raspberry  Torte

 

 

 

 

INGREDIENTS:
 

1 package (18 1/4 ounces) chocolate cake mix

1 package (3 ounces) cream cheese, softened

3/4 cup cold milk

1 package (3.4 ounces) instant vanilla pudding mix

1 carton (8 ounces) frozen whipped topping, thawed

2 cups fresh raspberries

confectioners sugar

fresh mint and additional raspberries (optional)

 

 


DIRECTIONS:

 

Preheat oven to 350 degrees.

 

Prepare the cake according to package directions.

 

Pour into 3 greased and floured 9 inch round baking pans.

 

Bake for 25 to 30 minutes or until a toothpick inserted near the center comes out clean.

 

Cool for 10 minutes before removing from pans to wire racks to cool completely.

 

In a large bowl, beat cream cheese until fluffy.

 

Combine milk and pudding mix.

 

Beat into cream cheese until smooth.

Fold in whipped topping and raspberries.

 

Place one cake layer on a serving plate.

Spread with 1/2 of the filling.

Repeat layers.

Top with remaining cake; dust with confectioners sugar.

 

Garnish with mint and raspberries if desired.

 

Store in the refrigerator.

Pecan  Coffee  Cake

 

 

 

 

INGREDIENTS:
 

1 package (18 1/4 ounces) yellow cake mix

1 package (3.4 ounces) instant vanilla pudding mix

1 cup (8 ounces) sour cream

4 eggs

1/3 cup vegetable oil

2 teaspoons vanilla extract

2/3 cup chopped pecans

1/3 cup granulated sugar

2 teaspoons ground cinnamon

1/2 cup confectioners sugar

2 tablespoons orange juice

 

 

 

DIRECTIONS:
 

Preheat oven to 350 degrees.

 

In a large bowl, combine the first six ingredients.

 

Beat on low for 30 seconds.

Beat on medium for 2 minutes.

 

Pour into a greased 13 inch x 9 inch baking pan.

 

Combine pecans, sugar and cinnamon; sprinkle over batter.

 

Cut through batter with a knife to swirl pecan mixture.

 

Bake 30 to 35 minutes or until a toothpick inserted near the center comes out clean.

 

Meanwhile in a small bowl, combine confectioners sugar and orange juice until smooth.

Drizzle over warm coffee cake.

 

Cool on a wire rack.
