Chocolate  Layer  Cake

 

 

 

 

INGREDIENTS:

1/4 cup vegetable shortening

1 cup granulated sugar

1 egg

1/2 teaspoon vanilla extract

1 cup all-purpose flour

1/4 cup baking cocoa

1 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

3/4 cup milk

 

 

 

FROSTING

 

INGREDIENTS:

1/2 cup butter, softened

2 1/2 cups confectioners sugar

1/2 cup baking cocoa

1 teaspoon vanilla extract

2 to 3 tablespoons hot water

 



DIRECTIONS:
 

Preheat oven to 350 degrees.

 

In a bowl, beat shortening and sugar.

Beat in egg and vanilla.

 

Combine the flour, cocoa, baking powder, baking soda and salt;

add to creamed mixture alternately with milk.

 

Pour into a greased and floured 9 inch round baking pan.

Bake for 30 to 35 minutes or until a toothpick inserted near the center comes out clean.

Cool in pan for 10 minutes before removing to a wire rack to cool completely.

 

 

 

FOR FROSTING:  

 

In a small bowl, cream butter.

Gradually beat in the confectioners' sugar, cocoa, vanilla

and enough water to achieve spreading consistency.

 

 

 

TO ASSEMBLE:

 

Cut cake in half.

Place one half on a serving plate.

Spread with 1/2 cup frosting.

Top with remaining cake.

Spread remaining frosting over top and rounded edge of cake.

Applesauce  Cake

 

 

 

 

INGREDIENTS:

1 cup all-purpose flour

3/4 cup granulated sugar

1/4 cup cornstarch

1 teaspoon ground cinnamon

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground nutmeg

1/4 teaspoon ground cloves

1/2 cup unsweetened applesauce

1/4 cup water

1/4 cup plain yogurt

2 egg whites, beaten

1/2 teaspoon almond extract

1/4 cup raisins

 

 

 

DRIZZLE

 

1/4 cup confectioners sugar

1 teaspoon water


 


DIRECTIONS:
 

Preheat oven to 350 degrees.

 

In a large bowl, combine the first eight ingredients.

 

In a separate bowl, combine the applesauce, water, yogurt, egg whites and almond extract.

Stir into the dry ingredients just until moistened.

Fold in raisins.

 

Pour into a greased 8 inch square baking dish.

Bake at for 25 to 30 minutes or until a toothpick inserted near the center comes out clean.

Cool on a wire rack.

 

 

 

FOR DRIZZLE:

 

In a bowl, whisk confectioners sugar and water until smooth.

Drizzle over cake.
