Baked  Horseradish  Salmon

 

 

 

 

INGREDIENTS:

1 salmon fillet (1 pound)

  1 tablespoon butter, melted

1 tablespoon prepared horseradish, drained

2 teaspoons lemon juice

1/4 teaspoon garlic powder

1/8 teaspoon pepper

 

 


DIRECTIONS:

 

Preheat oven to 375 degrees.

 

Place salmon skin side down in an 11 inch x 7 inch baking dish coated with cooking spray.

 

In a small bowl, combine the butter, horseradish, lemon juice, garlic powder

and pepper; spread over salmon.

 

Bake, uncovered, for 20 to 25 minutes or until fish flakes easily with a fork.

Baked  Cod  Italiano

 

 

 

 

INGREDIENTS:

1/4 cup chopped onion

1 garlic clove, minced

2 teaspoons olive oil

1 cup diced zucchini

1/2 cup sliced fresh mushrooms

1/2 teaspoon dried oregano

1/4 teaspoon dried basil

1 can (8 ounces) tomato sauce

1 tablespoon tomato paste

3/4 pound cod fillets

2 tablespoons shredded Parmesan cheese

 

 

 

DIRECTIONS:

 

Preheat oven to 350 degrees.

 

In a large skillet, saute onion and garlic in oil until tender.

Add the zucchini, mushrooms, oregano and basil.

Cook for 3 minutes or until tender.

Stir in the tomato sauce and paste.

Cook for 8 to 10 minutes or until heated through.

 

Place fillets in an ungreased 11 inch x 7 inch baking dish; top with vegetable mixture.

Bake, uncovered, for 20 minutes or until fish flakes easily with a fork.

 

Sprinkle with Parmesan cheese.

Flounder  Florentine

 

 

 

 

INGREDIENTS:
 

1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry

1 carton (8 ounces) spreadable garden vegetable cream cheese, divided

4 flounder fillets (3 ounces each)

2 tablespoons milk

1/2 teaspoon lemon juice

1/8 teaspoon salt

1/8 teaspoon pepper

 

 

 

DIRECTIONS:

 

Preheat oven to 375 degrees.

 

In a small bowl, combine spinach and 3/4 cup cream cheese.

Spoon onto each fillet; roll up.

Place seam side down in a greased 8 inch square baking dish.

 

Bake, uncovered, for 25 to 30 minutes or until fish flakes easily with a fork.

 

 


MICROWAVE  DIRECTIONS:

 

In a small microwave-safe bowl, combine the milk, lemon juice, salt, pepper

and remaining cream cheese.

Microwave on high for 30 to 60 seconds; stir until smooth.

Spoon over fish.
