Tomato  Tossed  Salad

 

 

 

 

INGREDIENTS:
 

6 cups shredded lettuce

2 medium tomatoes, cut into wedges

1/4 cup oil and vinegar salad dressing

1 teaspoon minced chives

1/4 teaspoon dried thyme

 



DIRECTIONS:
 

Place lettuce and tomatoes in a salad bowl.

 

Combine salad dressing, chives and thyme.

 

Drizzle over salad and gently toss to coat.


 

Serves 4

 

 

 

 

 

Cucumber  Tomato  Salad

 

 

 

 

INGREDIENTS:

2 medium tomatoes, chopped

1 medium green pepper, chopped

1 medium cucumber, peeled and thinly sliced  

1/2 cup chopped green onions

3 tablespoons granulated sugar

1/2 cup water

1/2 cup cider vinegar  

1/2 teaspoon salt

1/4 teaspoon pepper

 



DIRECTIONS:
 

In a serving bowl, combine the tomatoes, green pepper, cucumber and onions.

Sprinkle with sugar; toss to coat.

Let stand for 15 minutes.

 

Stir in water, vinegar, salt and pepper.

 

Cover and refrigerate for 2 hours.

 

 Stir; serve with a slotted spoon.

Italian  Spinach  Salad

 

 

 

 

INGREDIENTS:
 

1 package (6 ounces) fresh baby spinach

1 green onion, thinly sliced

1 hard-cooked egg, chopped

3 bacon strips, cooked and crumbled

3 tablespoons Italian salad dressing

2 tablespoons shredded Parmesan cheese


 


DIRECTIONS:
 

In a large salad bowl, toss spinach, onion, egg and bacon.

 

 

MICROWAVE  DIRECTIONS:

 

In a microwave-safe bowl, heat salad dressing on high for 30 to 45 seconds or until warm.

Pour over the salad and toss to coat.

 

Sprinkle with Parmesan cheese.

 

Serve immediately.
